Parmesan Cream Baked Chicken
Perfectly tender chicken encased in a creamy parmesan coating pairs well with almost any side dish and is sure to become your new favorite go-to chicken recipe.

- 1 lb boneless, skinless chicken breasts (uncooked)
- 1/2 tsp. garlic-infused olive oil
- 1/3 cup mayonnaise (real mayo, not miracle whip)
- 2 Tbsp. parmesan cheese (freshly grated)
- 1/4+1/8 tsp. paprika
- 1/8 tsp. salt
Preheat oven to 375 degrees F.
Pound out the chicken breasts to even thickness, then place in a 9" x 13" baking dish that has been lightly greased with cooking spray.
Mix the oil, mayonnaise, parmesan, paprika and salt together in a small bowl until thoroughly combined, then spread evenly with a spatula or butter knife over the tops of the chicken breasts (you should have just enough to cover the top of each chicken breast).
Bake in preheated oven for ~30 minutes, until internal temperature reaches 165 degrees F (cooking times will vary a bit depending on the thickness of your chicken breasts. Mine shown above took exactly 30 minutes).
Remove from oven and allow to sit for a few minutes before serving.
- The fat content shown in the nutritional information below is quite high. A lot of the fat ends up in the bottom of the pan, but this is still a relatively high fat dish so I would still recommend having a lowfat side dish with this for those with digestion issues. Some steamed carrots and green beans (in low fodmap portion sizes) with a small plain baked potato with a couple tablespoons of lowfat lactose free yogurt and some chives on top or a lowfat rice would be good ideas.
